Salted Caramel Brownies (Gluten Free)

It's been a while since I've posted on here, possibly due to traveling the country for open days and interviews at possible universities (blog post coming soon) and having more deadlines than I can count on one hand. It is finally all over, for now and I have had more time to relax and do a bit of baking. I chose to bake these mouth watering brownies and thought I would share them with you. I am currently loving all things salted caramel so I thought why not add it to a brownie, you really can't go wrong with chocolate and salted caramel. This brownie recipe is gluten free so is perfect for everyone to enjoy.

To make the brownies you will need;
   8oz margarine
   12oz of dark chocolate 
   8oz caster sugar
   3 eggs
   1 tsp of vanilla extract
   2tsp coffee dissolved in hot water
   3oz gluten free self raising flour plus 1tsp xanthin gum flour OR regular self raising flour
   10oz chocolate chips
   1 tin carnation caramel 
   1tsp sea salt flakes

Firstly, preheat your oven to 190 degrees and line a tin of your choice.

Melt the margarine and dark chocolate together, the mix should have a glossy look. 

In a bowl place the eggs, sugar, vanilla and coffee mix together than gradually add in the chocolate. Fold in the flour, xanthin gum and chocolate chips.

Pour half of the mixture into your desired baking tin, then pour the caramel over the top. Add your sea salt flakes, distributing evenly. Then pour the rest of the brownie mixture on top.

Now bake for 25-30 minutes until firm to touch. I prefer to eat these warm but they're just as nice at room temperature. Enjoy by themselves or with cream or ice-cream.
