Pancakes // American Style

To celebrate pancake day (one of the best days of the year!) I have put together a post on everything pancakes. My go to recipe is definitely Jamie Oliver's which gives you perfect American style pancakes every time but is still super easy.

To make the pancakes you will need;
  • 6 large eggs
  • 230g plain flour
  • 2 tsp baking powder
  • 280ml milk
  • 2 pinches salt
  1. First separate the eggs, putting the whites into one bowl and the yolks into another. 
  2. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter. 
  3. Whisk the whites with the salt until they form stiff peaks, then fold into the batter.
  4. Heat a non-stick pan over a medium heat, pour some of the batter into the pan and cook for a couple of minutes, or until it starts to look golden and firm. 
  5. You can make these pancakes large or small, depending on what you prefer. 
Extra step: Sprinkle fruit onto the uncooked side before flipping the pancake over. Continue frying until both sides are golden.

Now, this is where the real fun begins. Decorate your pancakes with whatever toppings you fancy. I went for yoghurt, raspberries, strawberries, blueberries along with a drizzle of honey and a light dusting of icing sugar.
